National Pancake Day!

Someone said or posted that it was Pancake day or something to do with pancakes. I just read the word pancakes and got happy. That word always makes me happy. It doesn't matter if I am eating them or making them. I can have them anytime and anywhere.

I don't know when I had my first pancake but I am guessing around the age of one or two.  During those years I lived with my grandmother, me and my mom. My dad was in the military. But, I do remember that my grandmother was more of a waffle person.  She would bring out the waffle iron and happily make them for us for breakfast. She was a waffle and an oatmeal person. But, when I learned to make my own pancakes I became a pancake person for sure. It took me a minute to learn the pancake flip and sometimes to this day I have a little trouble with this but it is all good because they are going in my belly. They are just as yummy whether flipped correctly or not.

So, in honor of pancake day or in my house breakfast day I made some pancakes. My son calls them a short stack. His short stack consists of 3-4 pancakes which he drowns with syrup. I always tell him would he like some pancakes with his syrup. He laughs and we carry on eating and talking. I guess pancakes bring us together on any day. He is like me too. He can eat them anytime and any place.

Happy National Pancake Day! I am sure that Pancake day will be coming around to this house at least twice a week.
